So, to each their own, but I wanted to let you know that I haven’t been eating meat for a while now and I feel great. I am not trying to sway you either way as to what you should eat, I just want to show you that you have options if the meat is sold out (disclaimer: follow your doctor’s advice). So let’s broaden your horizons with some great non-meat options. Maybe it’s time to switch it up and try something new!
Here are 2 of my favorite go to recipes for a protein/non-meat filled day:
Chocolate “Milk”shakes for breakfast
In a blender pour in:
- 8 oz of unsweetened coconut milk
- 8 oz unsweetened flax milk
- (don’t like these kinds of milk, you can use almond milk or any other milk substitute)
- 1 frozen banana
- 1 heaping spoonful of unsweetened cocoa powder
- 1 heaping spoonful of peanut butter (I prefer MaraNatha’s no salt no sugar added Peanut butter)
- 2 tbs chia seeds
- You can also add 1 tbs maca powder and 1 tbs unsweetened cocoa nibs as well
Blend until creamy smooth and you will have a delicious low sugar, high protein breakfast milkshake.
Veggie Portabella Burger
These are best when you grill them on a hot grill.
You will need:
- Large portabella mushrooms (1 per person)
- Balsamic Vinegar
- Olive Oil
- Salt and pepper
While the grill is heating up, clean the mushrooms by removing the stem and gently cleaning them with a damp paper towel. Once clean place wipe both sides of the mushroom down generously with olive oil and then pour the balsamic vinegar on both side. Salt and pepper them before you put them on the grill.
When you place the mushrooms on the grill leave them alone for the first 3-4 minutes. Turn them after about 5 minutes and cook for another 5 minutes on the other side.
These burgers are best served on a bun with lettuce, tomato, and sometimes I put guacamole on them as well. I will usually have a side salad with lots of veggies and baked sweet potato fries to make this a complete meal. Enjoy!!
